This was an appetizer I saw on a blog and knew I wanted to try this weekend for girls weekend at the cabin. It was easy and turned out yummy.
whisk in a big bowl 1 cup sugar, 3/4 cup apple cider vinegar, 3/4 cup vegetable oil. Add 3 cans black beans rinsed and drained and 3 cans shoe peg corn rinsed and drained.Add 1 bunch or scallions and cilantro chopped and mix well. Chill until serving. Serve with tortilla chips or corn chips.
