Praline Pecan Crunch

Whew! What a whirlwind of a couple of weeks. We had a fabulous and relaxing week at the cabin for Thanksgiving...and then back to my lil love bugs at work! I am still getting used to having this pretty lil thing on my finger and it has been really exciting seeing people's reaction! Only 3 more weeks until Christmas, I know it's going to be here before we know it!

So let me catch up to Thanksgiving before falling too far behind...

I made a yummy Praline Pecan Crunch trail mix to bring up to the cabin, it's super easy and a yummo snack-my principal made it for a staff meeting and I knew I had to try it.

Heat oven to 250 degrees. Combine 1 (16 0z.) pkg Quaker oat Squares Cereal and 2 Cups pecan pieces. I used the cinnamon quaker cereal, but you can use whatever flavor you want, I think they have a maple and brown sugar one too. I always use throw away pans for these types of recipes that deal with Karo syrup...easy cleanup.



Combine 1/2 cup light corn syrup.

1/4 cup butter

and 1/2 cup packed brown sugar in a sauce pan. Heat to boil over medium heat. Once boiling remove from heat and stir in 1 tsp vanilla and 1 tsp baking soda.

The mixture will puff up and pour over cereal mixture. Stir to coat. Bake 1 hour stirring every 20 minutes.

Spread on wax paper to cool. Break into pieces.

At the beginning of the week it didn't look like we were going to be able to cut down our Christmas tree, but luckily the weather changed in our favor and we got to!

  1. what a great tradition for you to cut down a fresh Christmas tree each year I bet it smells awesome! Greg your a dork but we love you anyways- you fit right in with our family!
